Bobotie, a traditional South African dish with fruity spiced mince meat baked with an egg-based topping, served with yellow rice, tomato and onion sambal, banana, and stewed fruit  

 




Here is the recipe for the SOUTH AFRICAN BOBOTIE  

 

Ingredients - base  

 

30 ml (2 tsp) cooking oil

3 onions, chopped

2 cloves garlic, minced  

15 ml (1 tsp) curry powder

5 ml (1 tsp) ground turmeric

5 ml (1 tsp) ground coriander

2 ml (1/2 tsp) ground cumin

5 ml (1 tsp) ground ginger (or grated fresh)

5 ml (1 tsp) cinnamon powder  

1 kg lean ground beef or lamb Salt and pepper to taste  

30 ml (2 tbsp) lemon juice

30 ml (2 tbsp) apricot jam

60 ml (1/4 cup) fruity chutney

30 ml (2 tbsp) brown sugar

30 ml (2 tbsp) Worcestershire sauce

30 ml (2 tbsp) tomato paste  

2 slices of white bread, crumbed (liquidizer)

250 ml (1 cup) seedless raisins

250 ml (1 cup) grated apple  

6 bay leaves  

 

Ingredients – topping  

 

500 ml (2 cups) milk (375 ml is sufficient at a push, then only use 3 eggs)

4 eggs, beaten

Salt and pepper  

 

INSTRUCTIONS  

 

·         Heat oven to 180 °C / 350 °F

.         Grease oven proof dish.

·         Meanwhile, heat oil and sauté the onions and garlic over medium heat, till soft

 ·         Add all dry spices and sauté for a minute

 ·         Add ground beef a bit at a time, crushing it to fine grains, until it changes colour

 ·         Season with salt and pepper, all flavouring condiments, as well as the bread, raisins and apple

 ·         Allow mixture to boil, turn down temperature and simmer for 30 minutes (add water if needed)

 ·         Dish the beef mixture into the oven proof dish, push bay leaves into it

 ·         Beat the milk and eggs for topping, adding salt and pepper to taste

 ·         Pour topping mixture over the beef

·         Place in oven and bake for 40 minutes or until the topping has set  

 

Serve with yellow rice, sambals and banana slices
