Caribbean Ginger Chicken

is a delicious tangy chicken dish served with local side dishes and rice.  

Here is the recipe for the Caribbean Ginger Chicken

          Juice and zest of 1 lime

          Juice of 1 orange

          2 tbs honey

•          2 tbs grated ginger

•          4 cloves garlic, minced

•          1/2 tsp cinnamon

•          1 tsp pepper sauce

•          2 lb chicken pieces

•          1 tbs vegetable oil

•          1 can (8 oz) tomatoes, crushed with juices




1.           Combine lime juice, orange juice, honey, ginger, garlic, cinnamon and pepper sauce and

               mix well to make your marinade.  

2.           Add marinade to chicken. Cover and refrigerate 2 hours.  

3.           Heat oil in saute pan. Remove chicken pieces from marinade, one at a time, and brown on each side.  

4.           Pour reserved marinade along with the tomatoes and lime zest on top of all chicken pieces in the pan,

                seasoning with salt and fresh pepper  

5.           Cover and simmer until cooked, about 20 minutes  

6.           Remove chicken pieces, increase heat on pan, and reduce juices to a thick sauce.

                Pour over chicken and serve
